I use the large pearls, and PLENTY of water-I ruined a pot by not using enough water, and it made a gooey mess! I use the long cooking kind-it takes about 45 minutes. I am thinking of trying it in my slow cooker. Perhaps you are using too high of a heat? I get the water boiling, then add the pearls, and cut it down to a slow simmer-seems to work just fine. Boil the tapioca pearls for 20 minutes and let it sit for 15 minutes. Rinse the tapioca pearls and then place in a container in the refrigerator. When you get the urge, boil a cup of water and put some refrigerated tapioca pearls in for about 3-5 minutes. Rinse, cover in sugar syrup and serve. So, if you are cooking a lot, you need more water, like 6 to 1, and if you are cooking less you can go with like 3 to 1. Also, try cutting down the cooking time and increasing the steeping time so they are about equal and see how that works for you. Different pearls may need different treatment, so experimentation may be the best way to determine the correct recipe.
